Everything but the Bagel Parfait

Ingredients

  • 3/4 cup nonfat
  • 2 ounces
  • 1 cup
  • 1/2 cup cherry tomatoes
  • 1 cup spinach
  • 1 teaspoon Trader Joes Everything But the Bagel Seasoning
  • 1/2 cup sliced red onion
  • 1/4 teaspoon salt

Instructions

  1. In a microwave safe bowl, add asparagus and 1 tablespoon water. Cover tightly with plastic wrap and microwave for 1 1/2 minutes.
  2. Carefully remove plastic wrap, rinse with cold water and remove from bowl with slotted spoon.
  3. In a separate bowl, layer spinach, 1/3 yogurt, tomato, 1/3 yogurt, asparagus, 1/3 yogurt. Top with salmon, sliced red onion and seasoning.
  4. Enjoy!
