All the flavors of this comforting classic without the carbs. Lasagna never tasted so good.
No Noodle Lasagna Bowl
- 3/4 cup nonfat cottage cheese
- 1/2 red bell pepper, diced
- 3 cups spinach
- 1/2 cup portabella mushrooms, sliced
- 1/3 cup Amy's Organic "Light in Sodium" Marinara
- 1. In a microwave safe bowl, add spinach, bell pepper, mushroom and marinara sauce.
- 2. Cover tightly with plastic wrap and microwave 3 minutes.
- 3. Add cottage cheese to serving bowl.
- 4. Carefully uncover vegetable mixture, avoiding steam. Add to cottage cheese.
- 5. Stir to combine, and enjoy!
