- 2 tablespoons Trader Joe's Satay Peanut Sauce
- 3 1/2 ounces cup chicken in chunks
- 1/2 cup pre-cooked lentils (like Trader Joe's Steamed Lentils)
- 4 handfuls spinach
- 1/2 cup pre-shredded carrot
- To a large microwave-safe bowl, add lentils, chicken, and satay sauce. Stir to combine
- Add spinach and carrot. Toss to coat.
- Tightly cover bowl with plastic wrap and microwave for 3 1/2 minutes.
- Carefully remove plastic and stir. Salt and pepper to taste.
