Quick Satay Chicken and Lentil Bowl

Ingredients

  • 2 tablespoons Trader Joe's Satay Peanut Sauce
  • 3 1/2 ounces cup chicken in chunks
  • 1/2 cup pre-cooked lentils (like Trader Joe's Steamed Lentils)
  • 4 handfuls
  • 1/2 cup pre-shredded carrot

Instructions

  1. To a large microwave-safe bowl, add lentils, chicken, and satay sauce. Stir to combine
  2. Add spinach and carrot. Toss to coat.
  3. Tightly cover bowl with plastic wrap and microwave for 3 1/2 minutes.
  4. Carefully remove plastic and stir. Salt and pepper to taste.
