Ingredients

  • 1 package (10 ounces) Trader Joe's Indian Fare Punjab Eggplant
  • 6 ounces pre-baked tofu, cubed
  • 4 handfuls of spinach
  • About 50
  • 2 cups shredded carrots

Instructions

  1. In a large, -safe bowl, combine contents of Punjab eggplant package, cubed tofu, raisins, , and spinach. Stir to combine.
  2. Cover tightly with plastic wrap and microwave for 3-4 minutes.
  3. Carefully remove plastic wrap. Stir, salt and pepper to taste, and enjoy.
