Grecian-style Healthy Vegetable Soup with Chicken
- 1 1/2 cup low-fat tomato soup like Campbell's Select Harvest Tomato with Basil
- 3/4 cup chopped Trader Joe's frozen Marinated Grilled Eggplant and Zucchini
- 1 3/4 ounces chicken breast, chopped
- 1/4 cup chickpeas
- 1/4 cup chopped frozen artichoke hearts
- Add all ingredients to a large, microwave-safe bowl.
- Cover tightly with plastic wrap and microwave for 3 minutes.
- Carefully uncover bowl and stir.
- Re-cover bowl and microwave for another 2 minutes. Salt, pepper, and garlic powder to taste.
