Easy Tuna Nicoise Spinach Salad

This Nicoise salad may have a fancy name, but it’s simple to prepare. Promise! Healthy power greens add fiber while and dial up the protein.

  • 2 cups pre-washed spinach
  • 3 ounces chunk light tuna packed in water, drained
  • 1 cup steam-in-bag green beans
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive
  • 2 boiled egg, yolk removed, white diced


  1. Steam green beans in the microwave, about 4 minutes.
  2. While beans steam, add spinach to a bowl and arrange tomatoes, egg whites, and tuna on top.
  3. Add the green beans.
  4. Top your spinach salad with tapenade.
