Easy Tuna Nicoise Spinach Salad
Ingredients
- 2 cups pre-washed spinach
- 3 ounces chunk light tuna packed in water, drained
- 1 cup steam-in-bag green beans
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive tapenade
- 2 boiled egg, yolk removed, white diced
Instructions
- Steam green beans in the microwave, about 4 minutes.
- While beans steam, add spinach to a bowl and arrange tomatoes, egg whites, and tuna on top.
- Add the green beans.
