- 1.5 cups Trader Joe’s Heirloom Red Spinach, stems discarded
- 1.5 cups green spinach salad mix
- 1 yellow bell pepper, sliced
- 1 cup leftover roast chicken breast, diced
- 1 tablespoon Trader Joe’s Raspberry Vinaigrette Dressing
- ¼ cup blueberries
- In a salad bowl, layer red spinach, green spinach and sliced yellow bell pepper.
- Top with diced roast chicken breast, raspberry vinaigrette dressing and blueberries.
- Mix well and serve immediately.
