Ingredients

  • 1/2 cup canned chickpeas, rinsed
  • 6 ounces pre-cooked beets like Love Beets Mild Vinegar
  • 1/4 cup mint, torn
  • 3 boiled egg, yolk removed, whites diced
  • 1 1/2 cup kale, cut into fine ribbons
  • 20 pumps Wishbone Salad Spritzer Italian Vinaigrette

Instructions

  1. Roughly chop beets and tear mint.
  2. Add beets, mint, and chickpeas to a bowl. Spray with dressing.
  3. Toss in hardboiled egg whites.
