- 1/2 cup canned chickpeas, rinsed
- 6 ounces pre-cooked beets like Love Beets Mild Vinegar
- 1/4 cup mint, torn
- 3 boiled egg, yolk removed, whites diced
- 1 1/2 cup kale, cut into fine ribbons
- 20 pumps Wishbone Salad Spritzer Italian Vinaigrette
- Roughly chop beets and tear mint.
- Add beets, mint, and chickpeas to a bowl. Spray with dressing.
